À l'origine de la révolution des petits bars, Darlinghurst compte plus de bars par personne que n'importe quel autre quartier de Sydney. Vous trouverez aussi bien des bars à whisky américain que des bars à thème des années 1950 ou des bars cachés où l'on entre avec un mot de passe secret. Oxford Street est la « capitale gay » de l'Australie avec des établissements destinés aux gays et lesbiennes qui proposent des « spectacles de divas » et des pistes de danse ouvertes toute la nuit. Good experience and great drinks. The service was a bit dismissive but they could put a drink together. The place is dark. Like DARK! overall, it’s a nice night out

Headed to eau de vie post a long lunch and was met with very friendly service. Our waitress was especially friendly and gave great tips on unique drinks to try.

Tuesday evening drinks with a work associate. I enjoyed the Old Fashioned with almond praline (rather than orange peel). She enjoyed and elderflower Plymouth Gin. Friendly service and we received a thorough explanation of the menu as well. I finished the evening off with a glass of Shiraz, while she enjoyed a Chardonnay.

We had been to Eau De Vie in Melbourne and so we thought we would try Sydney. The cocktails are very good and different. We also had food here. We had the sharing mixed plate and some beef sliders.It was very good and enough for us.

Came here with two girlfriends, staff are very friendly but as it got busier by 9.30pm, it also became a longer wait for drinks. A nice atmosphere to visit if you are staying at the hotel ‘The Kirketon’ but not a place I would make a trek for if you are not in the area.

Went here to chill on a friend's birthday after dinner. Great service from Paulo and cozy ambiance to just relax after a busy day at work and celebrate. I heard it was very busy during the weekends. Will definitely come back and checkout the espresso martini.

With the cool weather starting now, my palate has moved from gin to whisky. To get ready for the winter season, I visited a couple of whisky bars to keep you informed about where to drink this warming amber spirit. First, I got reacquainted with an oldie but a goodie – Eau-de-Vie in Darlinghurst. I was reminded of Sven Almenning’s moody speakeasy tucked in the rear of the Kirketon Hotel because he recently embarked upon a three-million-dollar equity crowdfunding drive for an upcoming bar venture. As all that Almenning touches usually turns to gold, it seemed like a great opportunity for customers to get in on the ground floor on a Nick & Nora’s Melbourne after the successful launch of Nick & Nora’s Sydney in Parramatta.
Almenning’s strength is in his training and his people - recall former star bartenders, Luke Redlington and Max Greco. Today, just showing a modicum of interest had one of the bartenders embark with me upon a lively discussion about the perks their cluster of future bar-owners will receive in The Speakeasy Group venues. Having the forethought to make a table reservation means despite landing in a loud and busy bar, we’re whisked straight to a lounge for our whisky adventure. From the menu of four flights, we opt for Scotch 101 ($50/each).
Presented on a wooden board with an accompanying cheese and cracker bite from the Eau-de-Vie deli, our whisky flight kicks off with the Aultmore 12-Year-Old. It’s a fairly simple dram that’s light and fruity, from a Speyside distillery that’s been bottling whisky since 1897. It’s matched to Primo Amore – a red-wine infused Italian cheese. Matured for 16 years in bourbon barrels, the Ancnoc 16-Year-Old has a bit more going on with vanilla and cereal notes, plus a good bit of wood. It’s teamed with an Italian soft cheese – Taleggio – that smells funky but eats creamy, bringing up some fruit in the whisky.
Chalky Manchego, a Spanish sheep milk cheese, is teamed with the 12-Year-Old Old Pulteney. It’s a good balance to the whisky’s sweetness and faint salty lick. The best whisky on the board to my palate is the Talisker 10-Year-Old, which is the only smoky whisky. It's got a hint of pear-like sweetness, and some earthy swampy qualities, plus peppery heat on the finish. Eating a strong cheese like Gorgonzola with it, lowers the smoky dryness, and brings up the whisky's sweetness for me.
While we've had our noses buried deep in the glass, the bar has emptied out and become the relaxed speakeasy I first visited nearly a decade ago. It's been fun getting reacquainted with it over four wee drams.

The Sydney Eau de Vie is such a low standard compared to the Melbourne one.
We thought the caliber and quality of Melbourne would have filtered through to Sydney, but we were wrong.
On entering we were sighed at for not making a booking.....(only 3 tables were taken).
From then on we were served by pretentious staff who didn’t smile and couldn’t even get the saffron and vanilla mousse chilled with the nitrogen! “A frozen cap” was actually slush mousse. Such a disappointment.
Will not be returning here.

The decoration of the place is really nice. All the waiters have a full knowledge of all the drinks in their extensive menu. They will help you get the right drink for you. The amount of detail they put into preparing the drinks is amazing and the presentation of the drinks is equally great. Can definitely recommend this place.

Cosy bar at the ground floor of the Kirketon hotel! The bar has a jazzy feel, is not to big and is very welcoming also for single traveller. As a single woman I felt really comfortable sitting alone at the bar. The bartenders are engaging and really know their metier. If you are overwelmed by choice they will ask you a few questions and tailor made a cocktail for you. Manuel, Paolo and Josh will give you a cocktail experience not to forget!
